Should I try to start with this to see if two year old daughter really enjoys the program, or is it easier to start her out on one she will use for a long while?
This is the model we currently have, although I originally purchased it just to play around on a bit. Anybody familiar with it, and will it be confusing for a young toddler to switch later?

Keri,
You are lucky! You have great instrument to start you journey with. In my class I have Casio and Yamahas of the same kind and some of them since 1998! They last without losing quality.
For a toddler it is a perfect fit. Later on, whan she will develop her skills, we are going tp talk about purchasing a piano for her.
